HAH, what a fool I must be to think that! Yesterday as I drove home I thought about making a box of Mac and cheese for dinner since I was kinda craving it. Well instead I looked up a recipe and tried my hand at a homemade baked dish instead. Oh my was it wonderful and relatively easy. It paired up nicely with some hot link sausage on the grill and some steam in bag broccoli and a piece of garlic bread.
Was so good I had the same thing for lunch again today but with pulled pork instead of sausage since it was in my fridge. Mmmm food!
Also washed both cars but forgot to take any photos. Food photos are more important anyways!

I actually prefer it that way. I can't stand crunchy broccoli and dealing with raw vegetables in general. Organic frozen stuff is pretty good to me especially for how convenient it is.

I regularly make a ham casserole that my boys love. The recipe, which I learned from my mom who made it when I was a kid, is super easy, and is basically baked mac and cheese but with diced ham. I like a good blend of different cheeses, and a small squirt of prepared yellow mustard (like French’s) will really make the cheese flavor pop. Just be careful not to overdo it.

You can cut up a head of broccoli and put it in a bowl with a squirt of water and covered with plastic wrap. Cut a couple of holes in the plastic wrap and stick it in the microwave for a minute or so, long enough to get the water steaming. Drain it, then apply liberal amounts of butter.

You could try to do a variation of a croziflette which is like a tartiflette but with crozets (small square pastas made of buckwheat) instead of potatoes ; obviously in your case, with something else than crozets that most probably are not available in your country and with the available cheese(s) (it can even be done with bleu cheese) .
It’s usually done with lardons but it’s even better with sausage (usually’ diots ).

Looks good. Mine is just a roux (butter, flour, milk) with the cheese melted in. Easy peasy.

I have several variations but they all follow the same basic foundations. Cheese sauce, shredded cheese, pasta, and topping. This year for the fourth, I went with an American cheese base with flaming hot cheetos and homemade breadcrumbs for the topping (50/50). It takes a bit of time, but it’s honestly not that much work. I should do it more often.

I can’t criticize for steamed bag broccoli . I mean, I wouldn’t serve it to some fancy guests, but as veggies go, it actually freezes really well. I’ve frozen my own extra fresh broccoli before and it’s zero difference from the steam bag.

Looks TASTY! Back when I used to grow pimentos I’d do pimento mac and cheese. Diced the peppers and sauteed them in butter then used that as the base for the sauce. Would recommend.
Damn it now I want mac and cheese....

The steamed broccoli at Ruby Tuesday used to be (and probably still is) just portioned into plastic baggies and nuked as needed.

Toasted bread crumbs on the top is the best. Plus bacon bits - real bacon, not the stuff in a shaker . Bacon is the best.

Boxed mac & cheese tastes like shit and takes the exact same amount of time to make as real mac & cheese. I’ll never understand why people eat that box shit

It’s definitely way faster to make it out of a box. It’s boil water and then cook for sub 10 minutes, mix and serve. Homemade was boil while prepping sauce, cook pasta while sauce cooks, combine the two in a dish, and bake for about 30 minutes, cool for 5 min or so, then serve. While the result was 1000x better, that box mix is nice sometimes. Assuming you mix it with some meat and veggies it’s a good easy dinner. It’s probably also a nostalgia thing since I ate it all the time growing up as it was easy enough for me to make myself as a kid and not tax my parents with cooking for me. As an adult sometimes it's nice to say fuck it and eat kiddie junk food like that.

Yes, oven baked thick bacon cooked at 200F for a few hours. That would be the ideal mix in! I've got a decent thick bacon I just got from costco.
